This month's Recipe Redux theme is all about unpacking a favorite vacation memory and recreating a healthy meal from the trip. I have a good one for you guys! The main reason I love to travel is to experience the food of the area. Sweet Potato Casserole Madeover

I have a sweet treat for you guys today...sweet potatoes, that is! As soon as November hits, I can't seem to get this casserole out of my head. Sweet potato casserole is an all time favorite holiday dish of mine. My mom has the most amazing recipe for sweet potato casserole. It's from one of those community church cookbooks that always seem to have the most amazing recipes in them. The only problem is, they aren't always the healthiest. I usually don't bat an eye about it because we really only eat it once, maybe twice, a year so it's NBD.
