Vegan Snickerdoodles

You might not believe this, but when I was in high school, most of my lunches consisted of a huge soft pretzel (extra salt, of course), a frozen coke, and a gigantic snickerdoodle cookie. I'm not sure when nutrient-density became the focus of my diet, but it clearly wasn't in high school. I'm sure the cookies they charged us for were nothing more than a ball of frozen dough made from less-than-average ingredients that they dug out of the back of the freezer and baked off just in time for lunch but, in high school, they were the most amazing thing to come out of the cafeteria.

Whole Grain Vegan Pecan Bars

This month's Recipe Redux really snuck up on me. I recently got back from a trip to Provence with my mom (more on that later!!!). Prior to our trip, I came down with a bad cold. The stay home from work kind of bad cold. I was busy getting some posts lined up to publish while we were gone. I was busy promoting The Casual Veggie Cookbook. And, most importantly, I was busy strategizing my packing (I can get a bit OCD when packing). My plan was to prep my Recipe Redux post so I wouldn't have to worry about it when I got home. Loaded Quinoa Cookies

 don't know about you guys, but I definitely go through phases in the kitchen. I get in moods where I want to try a ton of different recipes so I make multiple trips to the grocery store in a week to pick up random ingredients that I don't have.  After a couple weeks of this, I get into my Type A consolidation/minimization mode...I want to clean out the fridge/freezer/pantry. I try and get creative and use what I have to make meals and other treats.
