Start your morning off right with this decadent, yet healthy, Walnut Mocha Smoothie!

When California walnuts decided to team up with the Recipe Redux for a contest, I was so excited. We were given a lot of leeway in developing our recipe which was great but also made it hard to know where to start. I took the first couple weeks just deciding which meal to focus on before starting to work on my recipe. Since walnuts are so delicious and versatile, I incorporate them into all of my meals so picking just one to focus on was difficult. I top my oatmeal with them in the morning, add them to salads for lunch, pastas for dinner, snack on them plain, and they make a frequent appearance in desserts.
In the end, I decided on a smoothie that I enjoy for breakfast but could easily pass for a snack or dessert. This Walnut Mocha Smoothie is divine. I always know I have a winner on my hands when my husband tries it, comments on how good it is and then continues to say "This is SO good!", "What all is in this that makes it so good?", and "Wow, that was really good" in between each sip he takes. That, my friends, is how we know we have a winner on our hands.
The reason I love this smoothie so much is because it tastes outright decadent but doesn't even have to be considered an indulgence. It contains just a few simple ingredients to give it a mocha, chocolately, creamy goodness. The walnuts give the smoothie some staying power with 2.5 grams plant-based omega-3 fatty alpha-linolenic acid (ALA), 4 grams protein, and 2 grams fiber per ounce. Walnuts really pack a punch in the nutrition arena.

Walnut Mocha Smoothie
Makes 4 servings
1 cup brewed coffee, cooled
1 cup coconut milk
1 frozen banana
4 Medjool dates, pitted
1/4 cup cocoa powder
1 cup walnuts
4 large ice cubes
1. Place all ingredients in a blender. Turn blender on low and then gradually increase to high. Blend on high until smooth and creamy, about 2 minutes.
