A wise person once said that "sleep is just a time machine to breakfast". And by wise person, I mean some random quote I saw on Instagram. 99% of the time, breakfast is my motivation for going to bed at night.
Not even kidding.
I LOVE breakfast.
Like, seriously love it.
Like, can't get enough of it kind of love it. Especially when it is this Chocolate Covered Strawberry Baked Oatmeal
Would you believe that my mom had to force me to eat breakfast when I was growing up? In high school, the only thing she could get me to guzzle down in the morning was a can of Slim Fast on my way to school.
I know, I know...not the wisest decision on my part.
Once I started learning about nutrition and the importance of breakfast, I immediately regretted the first 18 years of my life that I didn't eat it...that's a lot of breakfasts to make up for!
The theme for The Recipe Redux this month was Breakout of Breakfast Boredom. I was so excited because breakfast is my jam. It totally sets you up for the day. Have you ever splurged on breakfast and felt totally weighed down the rest of the day? Or, worst yet, have you ever skipped breakfast and been thrown off the rest of the day?
Not only does it set you up for the day, it is a great opportunity to pack in some nutrition. Starting your day with whole grains, fruit, and some nuts is a great opportunity to fill your body with fiber, B vitamins, loads of minerals, vitamins, and phytonutrients, and some healthy fat.
My typical breakfast includes oatmeal with flaxseed, 2 pieces Ezekiel bread, nut butter, and a green smoothie. Yes, all of that. Every day.
Every weekday that is.
When I have time on the weekends, I like to get fancy with breakfast. Not fancy in the sense of bacon, eggs, and pastries. Fancy in the sense of Chocolate Covered Strawberry Baked Oatmeal.
Oh yeah, baby. You read that right.
And would you believe that it is jam-packed with nutrition and will give you energy for the day ahead?

Chocolate Covered Strawberry baked Oatmeal
2 1/4 cups rolled oats
1/4 cup ground flax seed
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups almond milk
1/4 cup brown sugar
2 teaspoons vanilla
3 tablespoons coconut oil, melted
2 cups strawberries, sliced
1/3 cup chocolate chips
Optional toppings: hemp hearts, almond butter, sliced strawberries, powdered sugar
1. Preheat oven to 375 degrees. Prepare a medium casserole dish by lightly spraying it with cooking spray. In a large bowl combine oats, flax seed, baking powder, cinnamon, and salt.
2. In a separate bowl, combine almond milk, brown sugar, vanilla, and coconut oil. Pour mixture into bowl with oats. Mix well to combine. Fold in strawberries.
3. Pour mixture into prepared casserole dish. Top with chocolate chips and lightly press them in. Bake for 35-45 minutes until bubbling and lightly browned. Allow to cool for 5-10 minutes before serving. Add optional toppings.
