Getting My Veg On

Happy Friday Friends! I am in a totally veggilicious mood right now. 

I am currently en route to Raleigh, North Carolina for a conference on the Plant Based Prevention of Disease. Dr. Esselstyn from the movie "Forks Over Knives" will be speaking at it along with some other awesome professionals. I am super excited about attending this conference and have a feeling I will return with a ton of new info and ideas of how to incorporate more veggies into my meals. 

In gearing up for this conference, my hubby and I watched "Forks Over Knives". It is a great documentary on the power of plant-based eating. As you may have noticed from some of my recent posts, we are trying to incorporate more plant-based meals into our diets. While I have always tried to incorporate meatless meals into our rotation and always have at least one veggie with each meal, I am trying to do mostly meatless meals when cooking at home...and the hubby is on board! 

Lastly, I am so excited to share some big news with you all! I am collaborating with over 45 awesome veggie-loving food bloggers to create an e-cookbook called The Casual Veggie! This project was created by Mollie Williams at Parsley and Pumpkins and will consist of recipes featuring (almost) every veggie imaginable. It's perfect for those times when you are standing in front of the fridge with that about-to-go-bad zucchini rolling around in the vegetable drawer and have no idea what to do with it. We've all been there. Luckily, The Casual Veggie will provide you with hundreds of great ideas of what to do. Stay tuned for more information to come.
