Chocolate Cherry Smoothie

I am one of those lucky people who doesn't work on Fridays. So, since today is Thursday, it's really my Friday, and since it's a long weekend, I get to have chocolate for breakfast.

If you work on Fridays, you have one more day to go before the long weekend, so you should have chocolate for breakfast, too.

If you don't work, then every weekend is a long weekend, and you should definitely have chocolate for breakfast.

If you don't fit into any of the above, you should still make this Chocolate Cherry Smoothie.

Do you want to know the best part about having this Chocolate Cherry Smoothie for breakfast? It's like having dessert for breakfast but you're actually getting tons of nutrition. I am one of those dietitians who likes see how many servings of fruits and vegetables I can get in per day, secretly tracks how many grams of fiber I am eating, and sets goals for how many bottles of water I drink per day (nutrition nerd alert!)

I am also one of those dietitians who loves chocolate and coffee. When I can have both of those things in the morning while making a dent in my fiber, water (in the coffee), and fruit and veggie tally at the same time, I call it a good day. This Chocolate Cherry Smoothie allows me to do all that while making me feel like I am drinking down dessert.

Each serving of this smoothie contains 1 1/2 servings of fruits and vegetables from the cherries and kale/spinach. The cocoa powder, dates, hemp hearts, and fruits and veggies provide this smoothie with 9 grams of fiber per serving out of the 25-35 that you need per day. Add in a little protein from the hemp hearts, a cup of coffee to go along with it, and I'd say your day is off to a good start. I've been making this smoothie the night before and keeping it in the fridge to save time in the morning. Just stir it up to recombine before gulping down your fiber-filled goodness.

Chocolate Cherry Smoothie

Makes 2 servings

Note: Costco started carrying a frozen organic spinach and kale blend which is what I used in this smoothie. This prevents your fresh greens from going bad before you use them. I keep this blend on hand because it works great for adding to smoothies and soups.

2 cups unsweetened almond milk

1 cup frozen spinach and kale blend

2 cups frozen cherries

2 pitted dates

3 tablespoons hemp hearts

3 tablespoons cocoa powder

1/4 teaspoon vanilla

1. Place all ingredients in a blender and blend on high until smooth.
