The Only Guacamole Recipe You'll Ever Need

I have to apologize in advance for the photos in this post. When I get a craving for guacamole, I usually don't have the patience to do more than smash some avocados in a bowl, add some salt and pepper, and maybe a splash of lime juice. I know, I's just "naked" avocado toast. But you guys, when that craving hits, it hits hard and I need the guac. 

A couple weeks ago, a co-worker brought some guacamole into work. After taking a few bites,  I began looking for any vehicle to ge it into my mouth I could. This wasn't your average guac. It was so good and definitely made me rethink my usual guac routine. The texture was perfectly creamy with the perfect amount of avocado chunks for texture. She was generous enough to share the recipe with me. 

This recipe quickly became a go-to for me. It's quick to throw together and I usually have all of the ingredients on hand (I'm guilty of keeping some bottled lime juice on hand for emergencies). Because of all the lime juice in this recipe, it doesn't brown. If you want to make it ahead of time, squeeze some of the lime juice on top, place plastic wrap directly over the guacamole so there is no air between the plastic wrap and the guacamole, and place in the refrigerator. 

If you make this, be sure to having plenty of dipping options handy. My favorite are Beanitos, multigrain chips like these, and los of cut up veggies. 

The Only Gaucamole Recipe You'll Ever Need

Makes 3 to 4 cups

3 ripe avocados, pitted

1/4 cup plus 1 tablespoon lime juice ( about 1 1/2 limes)

1/2 teaspoon salt

1/2 cup cilantro, chopped

1/4 cup water

3 scallions, sliced thin

1. Place all ingredients in a food processor. Pulse until ingredients are combined and the guacamole is to your desired consistency. Season with additional salt and lime juice to taste.
