Blueberry Banana Smoothie

I have a confession to make. 

We went home for the holidays which involved a lot of family time, a lot of laughs, and a lot of food. I try not to get too hung up on veering from my usual nutrition-packed diet every now and then when we are out of town and around the holidays. I don't go crazy but I enjoy myself and the people I am with. I try to balance the annual Christmas Eve milkshake with a veggie-packed green smoothie, the Christmas morning cinnamon rolls with Cranberry Apple Baked Oatmeal (stay tuned for the recipe coming soon!), and the movie theatre popcorn with snacking on veggies.

Even though I succeeded in my food balancing act, I still come home craving more fruits and veggies that usual. 

This smoothie helps me fill that void. It has been my latest go-to creation in the morning. It is loaded with fruits and veggies and packs a punch of protein and healthy fat from the peanut butter. Not to mention, it is easy on the eyes. 

Blueberry Banana Smoothie

Makes 2 servings

1 1/2 cups water or unsweetened almond milk

1 ripe banana

2 carrots, peeled and cut into large pieces

3 cups spinach

2 cups frozen blueberries

2 tablespoons peanut butter

1. Place ingredients in a blender in the order listed. Turn blender on and gradually increase to the highest speed. Blend on high for about 1 minute or to desired consistency.
